To turn the heating off, press and hold "OIL HEATING ON-OFF"
at least 2 seconds. The display will be again as shown in fig. 1.

STARTING COOKING

Do not fill the baskets above the maximum level indicated in
"Filling and using the baskets". The oil may spill out from the
tank and on the floor. WARNING: risk of slipping and falling
with possible serious or lethal injuries.
The set cooking temperature is shown at the top of the display
(fig. 2, item 7). When the oil reaches the set cooking tempera-
ture, the top of the display shows OK (the flame symbol disap-
pears).
Cooking can start as soon as the display shows "READY".
• Select the recipe for the type of food being cooked.
• Touch the "PLAY / PAUSE" key of the timer for the position
where the basket will be placed. The timer starts counting,
showing the remaining cooking time. At the expiry of the coo-
king time, an audible signal warns the operator.
• Place the basket with the food to be fried in the tank. In fryers
with basket lifting devices, touching "PLAY / PAUSE" will
move the basket down into the tank. At the end of the set
cooking time the basket will be lifted automatically.
OIL FILTRATION
The filtration process cleans the oil of any crumbs or (suspen-
ded) particles released by the food during cooking. It also
extends the life of the oil and improves the cooking quality.
To ensure quick and safe oil filtration, the fryer is equipped with
the following components (fig. A):
• stainless steel filtration tank (7) with maximum capacity 26 l;
• stainless steel metal filter (8) to collect crumbs;
• high temperature resistant fabric fine mesh filter (9) for the
smaller particles;NOTE: the 2 filters must be used together.
• tray suction pipe (2);
• stainless steel metal filter (10) to prevent the obstruction of
the tray suction pipe;
• pump, to send the filtered oil back from the filtration tank to
the cooking tank.
Filtering (emptying the oil into the filtration tank)
Filter the oil when at a temperature between 180 °C and 60 °C
(oil at a lower temperature should first be heated so that it is
within that range).
• Remove the filtration tank from its position and check that
both the tank and the 2 filters are clean.
• Replace the filtration tank in its position.
• Empty the cooking tank (instructions and warnings in the
"Emptying the tank content in the filtration tank" section).
• Clean the tank.
Cleaning the tank
• Remove the baskets from the tank, as well as the basket sup-
port mesh and the basket supports (automatic lifting models)
and lift the heating element (electric models).
• Remove any food debris at the bottom or the sides of the
tank, and on the heating element (electric models).
• Use a clean and dry cloth to clean the tank surface.
Returning the filtered oil to the cooking tank (fig. E).
Always clean the cooking tank before returning the filtered oil.
• Close the drain valve by pushing its handle to the end (1).

• Check that the suction filter (10) is in the tray.
• Check that the tray suction pipe (2) is connected to its fitting
(A) and inserted in the suction filter.
• Switch on the control panel (instructions in "SWITCHING ON
THE CONTROL PANEL").
• Touch "FILTRATION / TANK FILLING / EMPTYING" and then
FILTRATION... and follow the instructions on the display.
Touch "START" to switch the pump on".
The pump stops automatically after 7 minutes. The remaining
time is displayed on the top right.
The oil returns to the cooking tank from the drain pipe. Refilling
the tank will take approximately 5 minutes (the colder the oil,
the longer it will take). If the time taken is much longer, or filling
stops, the tray suction pipe may be obstructed by food debris.
Stop the pump and disconnect the hose from the fitting. Clean
the pipe as indicated in "INSTRUCTIONS FOR CLEANING -
TRAY SUCTION PIPE".
To stop the pump at any time touch "STOP".
• Wait until the filtration tank is empty and then disable the
pump. NOTE: it is normal for a small quantity of oil, generally
about ½ litre, to be left in the filtration tank.
• Check the oil level in the tank and top up as necessary (in-
structions in the "Filling the tank" section).
• Remove the filtration tank (7) from its position. Clean the
tank and the 2 filters. WARNING: the components may
still be hot. Leave to cool. The use of personal protective
equipment is recommended.
EMPTYING THE FILTRATION TANK TO AN EXTERNAL
CONTAINER (fig. F)
Do not leave oil in the tank during the night at ambient tempe-
ratures below 10 °C. WARNING: the oil could solidify, there-
fore preventing full use of the fryer.
Do not use the filtration tank to transport hot or cold oil, as the
tank was not designed for this purpose.
The oil may spill out from the filtration tank and on the floor.
WARNING: risk of slipping and falling with possible se-
rious or lethal injuries.
Only empty when the oil temperature is below 40 °C. WAR-
NING: danger of burns.
Regularly clean the filtration tank and the 2 filters.
• Open the door.
• Check that the tray suction pipe (2) is connected to its fitting
(A) and inserted in the suction filter (10).
• Connect the hose (3) to the fitting (B).
• Connect the pipe with handle (5) to the hose.
• Insert the pipe in the exhausted oil container.
• Switch on the control panel (instructions in "SWITCHING ON
THE CONTROL PANEL").
• Touch "FILTRATION / TANK FILLING / EMPTYING" and
then "EMPTYING... and follow the instructions on the display.
• Touch "START" to switch the pump on".The pump stops au-
tomatically after 7 minutes. The remaining time is displayed
on the top right. Emptying the tank will take approximately 5
