Recipe

Salmon with pea purée and carrots (4 servings)
800 g salmon fillet with skin, ready to cook
12 carrots, medium size, peeled, cut in half lengthwise
500 g peas, frozen
1 red onion, cut into fine cubes
200 ml fish stock
100 ml white wine, dry
1 garlic clove, pressed
2 garlic cloves, cut into fine cubes
2 mild chilies
10 tbsp peanut oil
6 tbsp orange juice
4 tsp brown sugar
1 tbsp butter
1 lime, zest of whole lime, juice of half lime
1 bunch cilantro
1 bunch mint
Salt and pepper
Seal the carrots airtight together with 3 tbsp of peanut oil, 3 tbsp of orange juice, the brown sugar and some
salt in a plastic bag. Using the Sous Vide Stick to heat water to 75 °C / 167 °F in a pot and cook the vacuumed
carrots for 40 minutes.
Stir 4 tbsp of peanut oil, 1 clove of pressed garlic, chilies and freshly ground pepper into a marinade and seal
the salmon together with the marinade in a plastic bag. Store the salmon in the refrigerator until further processing.
Heat the remaining peanut oil over medium heat in a pot and sweat the onion and garlic cubes. Deglaze with
fish stock and white wine and reduce over low heat.
Thaw the frozen peas in the reduced liquid. Fold in the chopped herbs, lime juice and lime zest. Crush everything
roughly with a fork, season with salt and freshly ground pepper and keep warm until served. Once the carrots
are done, remove them from the water and set them aside. Reduce the water temperature to 55 °C / 131 °F.
When the temperature is reached, cook the sealed salmon for 15 minutes.
Once the salmon is done, remove it from the water and plastic bag. Cut the salmon into four pieces and fry
these on the skin at high heat. At the same time melt the butter in a second pan and stir the carrots together
with the remaining orange juice. Spread the pea purée on preheated plates, add one piece of salmon to each
and decorate the carrots. Serve with some chopped herbs and freshly ground pepper.
